Sweet Potato Nutrition Facts
This root vegetable is an excellent source of vitamin A (in the form of beta-carotene), a very good source of vitamin C and manganese Beta carotene is known to be a potent booster for the immune system, as well as an important nutrient for good eye health. In addition, the vitamin A beta carotene helps to create is a potent antioxidant vitamin, responsible for reducing the harmful effects of free radicals in the environment. In addition to its role in eye health and proper immune system functioning, beta carotene may have an important role to play in providing protection against heart disease and possibly even some forms of cancer. Vitamin C, one of many antioxidants, is a water-soluble vitamin which is essential for normal functioning of the body. Vitamin C is required for the growth and repair of tissues in all parts of your body. It is necessary to form collagen, an important protein used to make skin, scar tissue, tendons, ligaments, and blood vessels. Vitamin C is essential for the healing of wounds, and for the repair and maintenance of cartilage, bones, and teeth. The body does not manufacture vitamin C on its own, nor does it store it. It is therefore important to include plenty of vitamin C-containing foods in your daily diet. Manganese in small amounts plays an important role in human nutrition. It forms an essential cofactor of numerous enzymes and is necessary for the utilization and balanced metabolism of many other nutrients. Manganese is a catalyst in the synthesis of fatty acids and cholesterol and is essential for the production of sex and thyroid hormones. Manganese may play a role in the prevention or treatment of several medical conditions including allergies, asthma, diabetes, epilepsy, heart disease, multiple sclerosis, osteoporosis, rheumatoid arthritis, sprains and strains. Sweet potatoes are also a good source of copper, dietary fiber, vitamin B6, potassium and iron. |
